Spicing puree originating in the Chinese cuisine of Teochew, a city in the Guangdong Canton with unique and famous cuisine. The puree is made of salt-cured chili peppers, coarsely cut and mixed with garlic and soy sauce, preserved in vegetable oil. The puree is reddish-brown, its flavor is salty and spicy (but not very spicy), and it has a strong scent of garlic. Ground chili oil serves as a basis for stir-fried dishes or for sauces and dips served along with prepared dishes, or is served as is along with cooked dishes.
