Sesame oil is one of the more basic and traditional ingredients in East Asian cuisine, mostly in Japan, Korea and China. The oil is produced by cold pressing toasted sesame seeds, its color is golden brown and it has a very strong aroma of toasted sesame. Its use is as flavoring, not for frying, as its strong flavor might dominate a dish when used as frying oil. Sesame oil is commonly used in various stir-fried dishes, soups and sauces, especially ones originating in Japanese, Korean and North Chinese cuisine. Sesame oil comes in pure form – containing only sesame oil – and mixed form (Sesame oil mixed with another vegetable oil). Use of the pure oil is solely for flavoring, while the mixed oil, with its gentler flavor, can be used as frying oil for stir-fried dishes.
