Noodles originating in Japanese cuisine. Soba noodles are based on buckwheat flour, usually with added wheat flour (which is why they are not suitable for those sensitive to gluten). Soba noodles are thin, their color is brown and their flavor is a bit nutty. Soba noodles have to be cooked quickly and then immediately washed in cold water, in order to get rid of excess starch. Soba noodles, whether hot or cold, are used in cold salads, stir-fried dishes and soups.
