Kanpyo is a variety of gourd commonly used in Japanese cuisine. The gourd is peeled and cut into thin strips that are then dried or pickled. Kanpyo is usually pickled in mirin, salt and soy sauce. Knapyo has a brown color, a soft, slightly stringy, meaty texture and a slightly sour flavor. Pickled kanpyo is vacuum-packaged with some of the pickling liquid, and serves as an ingredient in various rolls of sushi.
