The history of sake, also known as “Japanese rice wine”, is long and complicated, with production methods changing constantly over the years. There are dozens of sake varieties, differing in production methods, in the type of rice used and in the level of grain polishing. Sake is a very important ingredient in Japanese cuisine, and serves as a base for sauces and marinades. When used for cooking there is no need for high grade sake and it is best to use simple sake meant for cooking.
