Tapioca is starch extracted from the root of the cassava plant. The root, originating in South America, has by now spread across the world and is especially popular in Asian cuisine. Tapioca pearls are made of tapioca paste by compressing it through a sieve. The resulting pearls are dried and are used in East Asia, after being cooked in water, in a variety of desserts with added sweetened coconut milk, fresh or canned fruits and shredded ice.
