Noodles originating in Japanese cuisine. Somen noodles are made of wheat flour and are very thin, short and light colored, and have a chewy texture. In Japanese cuisine, somen noodles are often served cold – during summer time they are commonly served with ice cubes, along with a bowl of dipping sauce made of soy sauce, dashi and a little bit of mirin. They can also be added to salads or served in hot soup.
