Salads, as they are known in the West, were not originally a part of East Asian culinary traditions, but as time passed Western culinary culture’s influence in East Asia gradually grew, and with it came different eating habits. Western-style salads are fairly common in the East, but their dressings were given a local touch. In Thailand it is common to make vinegar-based salad dressings, without adding oil (which makes the dressings more akin to local sauces), adding flavoring such as lemongrass, chili, coriander and garlic. This dressing, with its sweet and sour flavor, works well with lettuce-based and vegetable-based salads, and is ideal for those who prefer their salad dressings oil-free.
