Tonkatsu is a Japanese dish of pork rib, covered with Panko (bread crumbs) and deep-fried. In other words – the Japanese version of schnitzel. Traditionally, tonkatsu is served on a bed of finely shredded white cabbage along with a bowl of thick, sweet and sour and salty sauce, somewhat similar to Worcester sauce. Tonkatsu sauce is quite thick and its color is brown and slightly clear. Tonkatsu sauce is made of a mixture of vegetables and fruits along with vinegar, soy sauce, sugar and various spices. The sauce is served as a dip and there is no need to thin it down or to add anything to it.
