Soy sauce that has fermented for longer than regular soy sauce. Cornstarch is sometimes also added to it. This darker and thicker soy sauce has a more viscous texture and a deeper, less salty, flavor than regular soy sauce. Dark soy sauce is usually used in slow cooked dishes and when a brownish color is desired for a dish.
